Chocolate Zucchini Cake

1/2 cup butter or margarine

1/2 cup vegetable oil

1 3/4 cups sugar

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 large eggs

1/2 cup sour cream or yogurt

2 1/2 cups flour

3/4 cup cocoa

3 cups shredded zucchini

  1. Melt butter then mix in oil, sugar, vanilla, baking soda, baking powder and salt until smooth.
  2. Beat in eggs.
  3. Stir in sour cream.
  4. Add flour and cocoa.
  5. Fold in the zucchini.

Bake at 350 degrees for 40-45 minutes.
